Zucchini Mock Crab Cakes Recipe

I know it gets a bad rap, but we actually like zucchini! I have so many different recipes that it doesn’t get old very quickly. This year we have 18 plants and we are picking small zucchini to try to keep ahead of them. (I guess some are technically summer squash, but you get the idea.)

In “zucchini season” I sometimes make zucchini mock crab cakes for lunch. This recipe actually originally came from my Meemaw. I don’t actually like seafood, so I don’t know if they really taste like crab cakes or not, but regardless they are pretty good!

Zucchini Mock Crab Cakes

Ingredients:

  • 2 cups shredded zucchini

  • 1 egg

  • 1 tsp Old Bay seasoning

  • 1 Tbsp mayonnaise

  • 1 sleeve Ritz crackers, crushed

  • vegetable oil for frying

Directions:

Heat oil in the bottom of a large pan over medium heat. Use just enough oil to cover the bottom of the pan. In a medium bowl, combine zucchini, egg, seasoning, and mayonnaise. Mix well. Stir in crushed crackers. Scoop a large spoonful (about 1/4 cup) into the hot oil. Press slightly with the back of the spoon to flatten. Fry until browned on each side. Place on a plate lined with a paper towel to absorb excess oil.
