Easy Ice Cream Layer Cake
/Birthdays around here are hit or miss. I have mentioned this several times before. It is all dependent on our schedule and my level of ambition. One time I was not in the mood to bake something extravagant, so I made ice cream cakes using ice cream sandwiches as the base. I didn’t have to scoop out ice cream for the guests so it really simplified everything.
You can use any combination of ice cream and cookie flavors that you want to try! I have also added caramel and/or chocolate syrup which definitely makes it sweeter. There really is no way to screw this up. Here are the basic directions for how I usually make it.
Easy Ice Cream Layer Cake
Layer ice cream sandwiches in the bottom of the pan you are using.
To make it easier, I flip an ice cream carton upside down on a plate, tear the paper away, and use a large knife to slice the ice cream about 1/2-3/4” thick and place it on top of the ice cream sandwiches. Eventually it melts enough to spread out.
Crush a 14-15 oz. package of Oreos or other cookies and layer on top of the ice cream.
Pour an 11-12 oz. jar of hot fudge over the cookie layer. This will keep the cookies from mixing with the next layer.
Spread a thawed 8 oz. container of whipped topping over the cake. Decorate as desired.
Easy Ice Cream Layer Cake Recipe
Ingredients:
one 12 count box ice cream sandwiches
one 1.5 qt. carton ice cream, any flavor
one 14-15 oz. package Oreos or any other crunchy cookie
one 11-12 oz. bottle hot fudge
one 8 oz. container whipped topping, thawed
Layer ice cream sandwiches on the bottom of a 9x13 pan. Spread ice cream on top of ice cream sandwiches. Crush cookies and spread over ice cream. Heat hot fudge and pour evenly over crushed cookies. Spread whipped topping on top. Freeze until ready to serve.
