Zucchini Chocolate Cake Recipe
/I was an extremely picky eater as a child. No green vegetables. Actually, potatoes, corn, and sweet potatoes were the only vegetables I would eat.
Then, my Aunt Karen made a chocolate zucchini cake for a family picnic and I actually liked it! I mean, you can’t really taste the zucchini- it just keeps the cake really moist. I loved it so much I actually requested it for my birthday!
If you peel the zucchini before shredding it, you really can’t tell that it is in the cake at all. It is a great way to get picky children to eat a new vegetable!
Zucchini Chocolate Cake
1/2 cup butter (1 stick)
1/2 cup vegetable oil
1 1/2 cups granulated sugar
1 egg
1 tsp. vanilla
1/2 cup sour milk (can make this by adding vinegar to milk)
2 tsp. baking soda
2 1/2 cups flour
4 Tbsp. baking cocoa
2 cups shredded zucchini
12 oz. package semi-sweet chocolate chips
Cream butter, oil, and sugar. Add egg and vanilla. Mix well. Alternately add sour milk and dry ingredients to the mixture. Stir in shredded zucchini. Pour into pan and sprinkle chocolate chips evenly over the top. Bake at 325 degrees for 40-50 minutes.
Since it is topped with chocolate chips and you don’t have to wait for it to cool to spread icing, you can eat it while it is still warm, too!
