Chicken Taco Salad
/Story time!
When I was pregnant with my youngest daughter the smell of sugar made me nauseous and I craved salads. This was very uncharacteristic of me because I had previously loathed nearly all green foods. I tried serving just salad for meals and the rest of my family was less than pleased. However, that same fetus is now my salad-loving little girl who has even packed plain lettuce as a school snack!
This is one salad that I can actually pull off as a meal for my family that they all love! It is a simple chicken taco salad made with fresh ingredients. The corn gives it a bit of a sweet crunch and the tortilla chips add saltiness. There are a lot of flavors happening in this one.
Chicken Taco Salad
Ingredients:
2 cups chicken, cooked and diced
6 ears fresh sweet corn
lettuce
tomatoes, diced
tortilla chips
1/4 cup salsa
1/4 cup ranch dressing
olive oil
1 packet taco seasoning
Directions:
Coat a medium frying pan with olive oil. Fry cooked chicken with half of the taco seasoning until heated through and well coated, stirring constantly over medium heat. Remove the meat from the pan . Cut the corn off of the cob and add to the hot frying pan. Sprinkle with the remaining taco seasoning and heat until slightly caramelized, stirring constantly. Mix ranch and salsa for the dressing. Layer lettuce, meat, corn, and tomatoes. Top with dressing and chips.
