Chicken Cordon Bleu Casserole

I really like chicken cordon bleu, but this casserole version is a lot easier to prepare! I just heat up a vegetable like green beans or peas to go along with it and dinner is ready!

It took awhile to work this one out. I went through several variations until settling on this final recipe. I use rice as the base because some people in my household don’t do well with gluten. I have a friend who prefers it over noodles and I bet that is delicious too!

Chicken Cordon Bleu Casserole

Ingredients:

  • 3 cups cooked white rice

  • 2 cups cooked chicken, cut it small pieces

  • 1 cup diced ham or ham lunchmeat, chopped

  • 1 cup shredded swiss cheese

Sauce:

  • 1 stick butter

  • 1/2 cup cornstarch

  • 2 cups chicken broth

  • 2 cups milk

  • 1 Tbsp. dijon mustard

  • 1/2 tsp paprika

  • 1/4 tsp pepper

  • 1/2 tsp salt

Topping:

  • 1 stick butter

  • 1 cup seasoned breadcrumbs

  • parsley

Layer rice, chicken, ham, and cheese in a greased 9 x 13 baking pan. For the sauce, melt butter in a medium saucepan then add cornstarch and mix well. Add chicken broth and milk, stirring over medium heat until thickened. Add mustard, paprika, salt, and pepper. Pour over casserole. For topping, melt butter in a small saucepan then add breadcrumbs. Mix until combined and spread over casserole. Sprinkle with parsley.
