Instant Pot Taco Soup

I jumped on the Instant Pot band wagon last year! Some people love it and others say it is just a fad. I had some Kohl’s cash and coupons that brought the price down significantly so I decided to give it a try. I got the 8 quart version, since we have a lot of mouths to feed.

I can’t say that I use it daily, but I do use it a few times a week. I make homemade yogurt for my husband about once a week. I use it as a rice cooker (so I am down one appliance). It is great for preparing hard boiled eggs! I cook frozen chicken for use in other recipes. It also doubles as a crock pot so I use that setting sometimes, too. I have tried out a few different recipes, but one of my favorite things to make is soup!

A new family favorite is taco soup! This recipe is super easy!!! I love that I can just throw everything in, close the lid, and walk away. I am often so busy multitasking that I forget to stir soup that is simmering on the stove. In the Instant Pot, as long as there is enough liquid, you can’t burn it!

I start out by browning the ground beef using “Saute” mode. I find that it cooks more efficiently than my electric stove top. I drain the grease and then dump all of the other ingredients into the insert. After a quick stir, I seal the lid, press the “soup/chili” button, and let it cook!

We like to top it with sour cream, shredded cheese, and corn chips. Yum!!!

If you don’t have an Instant Pot, this recipe could definitely be made in a pot on the stove. Just don’t forget to stir it! :)


Instant Pot Taco Soup

1 lb. ground beef
1 can diced tomatoes (or rotel if you prefer)
2 cans corn (we use a quart bag of frozen corn from our garden)
1 can light red kidney beans
2 cans black beans
1 packet ranch dip mix
1 packet taco seasoning
2 cups water

Brown the ground beef in the insert using the “saute” mode. Drain the grease. Add all other ingredients to the Instant Pot and sir. Close the lid and turn the vent to the sealing position. Press the “soup/chili” button on the Instant Pot. When finished, use the quick pressure release as desired.

(I have an 8 quart Instant Pot but I believe this would also fit in a 6 quart Instant Pot. Just make sure it isn’t past the fill line in the inert.)
