Chocolate Chip Panacakes


My blog has been neglected.
What have I done lately… gone to a zoo, an amusement park, and Kindergarten; been on our gigantic homemade slip-n-slide; and started many, many craft projects… started. Oh, I have finished things. My hubby’s jeans are all patched (for now), I have mended a few dresses (yes, there is that dirty “m” word), and my bathroom floor is scrubbed. Just nothing all that exciting.

I have also been working on getting ornaments in my etsy shop. I know, I know. It is only June. Just don’t tell my mom, she forbids us from playing Christmas music until after Thanksgiving is over (after all, we should give thanks first!)

So anyway, I did do something special this morning, and I wanted to share it with you. I perfected chocolate chip panacakes (Yes, pan-a-cakes- that is the way my little brother used to say it- sounded like he had an Italian accent, fitting since we are 1/8 Italian).

2 cups Bisquick
1 1/3 cups milk
2 Tbsp. sugar
1 egg
1 tsp. vanilla
Mini semi-sweet chocolate chips

Mix together everything except chocolate chips with a wire whisk in a bowl that has a spout. Pour into greased electric frying pan or griddle. Then, as soon as you pour the pancake batter, sprinkle mini chips on top evenly. They will sink down in a bit if you do it fast enough. (“Why not mix them in?” you ask- because the chips sink to the bottom of the batter, and then the kids fight over whose is more chocolatey. OK, I really meant I fight over the chocolatey ones.) Flip them over when the bubbles on top pop and they are golden brown on the other side. You don’t even need syrup with these, although I have tried chocolate syrup instead before. Yes, I have a problem. I know.
